Sesame Kale

from Greens Glorious Greens!

3/4 lb. Kale (approx 6c.), washed stemmed & coarsely chopped
1 T. sesame or olive oil
1-2 t. finely chopped fresh garlic
1/2 c. chopped scallions, white & green
salt to taste
1 1/2 T. toasted sesame seeds

1. Bring 2c. water to boil in a large 10-12 inch skillet that has a tight-fitting lid. Add chopped kale and cook for about 5 minutes, stirring occasionally, until kale is tender. Remove cooked kale with slotted spoon to drain, save cooking water to drink. (not so much the last part here)

2. Rinse out and dry the skillet, then use it to heat the oil over medium-low heat. Add garlic and saute for about 1 minute. Stir in scallions and cook for another minute.

3. Add cooked kale and salt to taste and stir to combine. Cover and cook for 1-2 min. until kale is hot. Sprinkle with sesame seeds and serve immediately.

Serves 3-4 as a side.

  1. So, how was this??? I've never tried kale, but am a fan of greens (mustard, collard, turnip). I just remember Woody on Cheers doing a commercial for a juice blend drink called Veggie-Boy. He had the most disgusted face, and with a mouthful said, "Kale was a bad idea" when listing off the ingredients for the camera

  2. Kale is less popular than Chard around our house. This one was just O.K. I'm hoping the next time it shows up it will be more of a white bean Italian soup time of year.
